Whats the difference between the DSG and the S Tronic then? And which is faster?

S-Tronic is only Audis new label for the Volkswagen DSG. That's it. No technical differences at all, Volkswagen Models will also get the 7 Gear DSG / S-Tronic.

The big news here should be the fact that this gearbox, unlike the previous VW/Audi dual clutch transmissions, is intended for longitudinal drive trains rather than transversal drive trains. Meaning, Torsen quattro instead of Haldex 4wd. Also, usable in A4/6/8 and Q5/7 instead of only A3.

Besides Q7, Touareg and may be Pheaton (if it is ever continued) may use it too. and we shouldn't forget the lovely A5/S5!
